with a Steak Recipe
Ingredients
For the Steak
250g steak (prime rib, sirloin, hanger, skirt, fillet)
30g (2 tbsp) avocado oil
5g (1 tsp) coarse salt
For the Roasted Vegetables
1 sweet potato
1 hot pepper
1 zucchini
2 red onions
1 kohlrabi
1 beet
1 whole garlic bulb
30g (2 tbsp) avocado oil
Salt and pepper to taste
Instructions
Preheat the oven to 190°C (375°F) on convection mode.
Slice all vegetables (except the garlic, which remains whole with its skin) to uniform thickness for even cooking. Season well and arrange evenly on a baking tray.
Roast for 25-30 minutes until golden.
Season the steak with salt and avocado oil. Let it sit at room temperature for at least 30 minutes before cooking.
Heat a stainless steel or cast iron skillet over medium heat for 2 minutes.
Lower the heat to medium, place the steak in the pan, and apply light pressure to ensure even searing. Cook for 2-3 minutes per side (depending on preferred doneness), then let it rest for 2-3 minutes.
